Mashed Potato Recipes

Wonderful with stew!

This is a great Christmas snack.

you may use butter instead of olive oil you can also use cream or milk i find the ues of olive oil healthier.....enjoy

You can double the recipe for more. This is really a simple way of making mashed potatoes, good too.

I use mayonnaise for butter because is good and doesn't really effect the taste of the potatoes and you can use fat free mayonnaise and still get the butter type taste. You can also use skim milk and the mayonnaise gives you the creamy texture with out the fat.

These decadent mashed potatoes make a super change from boring plain old mashed potatoes, while not being too weird for children to enjoy. This recipe also uses common ingredients (no searching for goat cheese or seaweed to make this recipe) and is quick and easy to make. The potatoes can be boiled in advance, cooled to room temperature, and refrigerated. Simply reheat in a large skillet or saucepan until piping hot before finishing the recipe.

Extremely good --you can make it a day or two ahead.........

This item is a MAJOR hit with everyone. It's taking all of the work out of everyone having to do the dreaded, but much loved baked potato! My husband always said he'd pay extra at a restaurant if they would blend his potato for him! I often make this a day or two in advandce and just up the oven time to heat when needed. The concentrated flavor of dried portobello mushrooms inhabits this exotic version of mashed potatoes. If you have a mini-chopper, use it to mince the mushrooms; if not, you will have to use a knife, as most full-size food processors are too large to chop small quantities evenly. The mushrooms don't require presoaking, because they will hydrate as they cook with the potatoes.

This delicious potato dish is great to make when there are leftover mashed potatoes. However, I find leftover fresh potatoes discolor and have a stale unattractive flavor.
