This item is a MAJOR hit with everyone. It's taking all of the work out of everyone having to do the dreaded, but much loved baked potato! My husband always said he'd pay extra at a restaurant if they would blend his potato for him! I often make this a day or two in advandce and just up the oven time to heat when needed. Let me know how it goes!

Ingredients

  • Preheat oven to 375
  • Casserole dish
  • 6-8 peeled and diced idaho potatoes
  • 8 oz. grated sharp cheddar cheese- 2oz. set aside
  • 1 stick butter or marg.
  • 1 c. sour cream
  • bushell of chives chopped finely (to taste)-1oz. set aside
  • 1lb. cooked and crumbled bacon-2oz. set aside
  • salt and pepper to taste

Directions

Boil potatoes. Drain water and add butter. With electric mixer, mix till potatoes aren't lumpy. Stir in remaining ingredients that aren't set aside. Add salt and pepper to taste and more sour cream if you like yours creamier. Put mixture in casserole dish and garnish with set aside items. Bake for 20-30 minutes.
