• Roasted Garlic:
  • 1 head garlic, loose papery skin removed, but not completely peeled
  • olive oil
  • Mashed Potatoes:
  • 4 large potatoes
  • 1/3 cup warm milk, skim or otherwise
  • 1 tbsp. butter


Roasted Garlic: Rub whole head of garlic with olive oil. Cover with foil and place on a baking pan and bake at 350-degrees for 30-40 minutes, depending on size of garlic head. Remove from oven, allow to cool, then squeeze from skin into a bowl.

Boil the potatoes until tender, place in bowl and mash with milk, butter and roasted garlic, until well mixed. Serve immediately (hot).
**Sometimes I like to add 1/4 cup grated smoked Gouda cheese before mashing the potatoes
