Roasted Garlic Mashed Potatoes Recipe | |

Ingredients:
Roasted Garlic:1 head garlic, loose papery skin removed, but not completely peeled olive oil Mashed Potatoes: 4 large potatoes 1/3 cup warm milk, skim or otherwise 1 tbsp. butter
Directions:
Roasted Garlic: Rub whole head of garlic with olive oil. Cover with foil and place on a baking pan and bake at 350-degrees for 30-40 minutes, depending on size of garlic head. Remove from oven, allow to cool, then squeeze from skin into a bowl.Boil the potatoes until tender, place in bowl and mash with milk, butter and roasted garlic, until well mixed. Serve immediately (hot). **Sometimes I like to add 1/4 cup grated smoked Gouda cheese before mashing the potatoes |
