I use mayonnaise for butter because is good and doesn't really effect the taste of the potatoes and you can use fat free mayonnaise and still get the butter type taste. You can also use skim milk and the mayonnaise gives you the creamy texture with out the fat.

Ingredients

  • 1-2 potatoes per person(depending on size of potatoes)cut-up
  • 1-4 cloves garlic(depending on taste & size of clove)
  • 1/4 to 1/2 cup Mayonnaise(replaces the usual butter/margarine)
  • Milk or Cream, enough to cream the potatoes

Directions

Put cut-up potatoes and peeled garlic cloves in water that just covers the potatoes along with a good shake of salt. Bring to boil, cook until potatoes can be easily pierced with a fork, about 20 minutes, depending on the size of the potato. When done, drain, mash the potatoes with mixer, adding the mayonnaise as you would add butter. Mix abit, then add the milk or cream to mix the mashed potatoes to the consistency that you like, start out with a little then add in small amounts. Season with salt & pepper to taste.


Serves based on number of potatoes you use
