One of the latest versions of cooking a Prime Rib (and it seems quite popular) is setting the oven to 500 degrees, putting the prepared meat in, leaving it for about 1/2 hour, then turning the oven off and leaving it for 2 hours with the door closed. I think that this method would depend on your oven. I KNOW that mine won't remain hot for that long a period of time, and I would be worried about the meat spoiling.

If you want to use a salt coating, I suggest moistening the rock salt with beaten egg whites. It is a little easier to apply. I have cooked prime rib twic and used the salt coating both times. It turned out great, but this year I am going to cook it without salt. The beef was great but the pan drippings were ruined from all the salt. This is now our new Christmas dinner tradition. Good Luck! (Although, the good thing with prime rib is that with such a good piece of meat, it is hard to mess it up!)

This method was a trial and error at our house and its the only way we do it now. The outside of your roast will turn a little crispy and there will be a wonderful aroma! Try a little horseradish or horseradish sauce for dipping. Careful! Fresh horseradish is VERY hot. At our house two ribs (one each) are enough for two meals. For the second meal we make French Dip Sandwiches. Follow directions on a package of Knorr Au Jus mix (NO OTHER KIND), slice leftovers thinly across the grain, heat quickly but thoroughly in prepared au jus, place on french bread drizzled with the au jus, and serve each person with a small a cup of it for dipping. Yum! If your roast is the slightest bit tough after following all the steps in this recipe, buy your next one elsewhere. It happens.
