Ingredients

  • 4-6 lb. rib roast (figure 3/4lb.-1 lb. per person)
  • salt and pepper to taste

Directions

Heat oven to 325. Place the roast on a rack fat side up in a roasting pan. Roast uncovered for 32-35 minutes per pound for a medium done roast. For a rare roast figure about 26-30 minutes per pound. Always use a meat thermometer to test the internal temperature to make sure it is exactly right. Rare 140 degrees Medium 160 degrees.

Let the roast stand about 15 minutes and it will be easier to carve. Meat continues to cook after you remove it from the oven so keep that in mind too when checking the temperature.
