If you want to use a salt coating, I suggest moistening the rock salt with beaten egg whites. It is a little easier to apply. I have cooked prime rib twic and used the salt coating both times. It turned out great, but this year I am going to cook it without salt. The beef was great but the pan drippings were ruined from all the salt. This is now our new Christmas dinner tradition. Good Luck! (Although, the good thing with prime rib is that with such a good piece of meat, it is hard to mess it up!)

Directions

23-25 minutes per pound at 275-300 F
