I hope you enjoy this recipe for Swedish meatballs with a thick savory gravy. My family and I just love it.

These highly spiced meatballs are also made in North Africa, the Middle East, Turkey, and Greece and are most frequently known as kefta. In Spain, they are called Albondigas and this is Biatriz's recipe, who lives outside Seville.

I usually triple the recipe, simmer for a bit without the gravy, freeze, then finish with gravy when I use them.

In Arabic this soup is called "Beid bi lamoun" In Greek, it's called "avgolemono" both simply mean "egg and lemon". I've never made it, but it looks delicious in the cookbook. Enjoy!

A light touch is the secret to better burgers, meat balls and meat loaves. Too much handling gives them compact texture, so mix carefully. When shaping burgers or meatballs, try to keep them uniform size. Use a 1/3 or 1/2 cup measure to scoop out the meat for hamburgers and for meatballs, use a 1/4 cup measure or one to 2 TBS of ground beef for each meatball.
