| Whipped Garnet Yams with a Pecan Praline Crust |

Candied yams are traditional on the Thanksgiving table, but this winter root vegetable is a colorful and welcome addition to the Christmas table, too. For years, I have taught Thanksgiving classes around the country, and every time I demonstrate this recipe and the students sample the dish, they tell me these yams are the best they have ever tasted. They are lightened with eggs and enriched with butter and brown sugar. But the praline crust is what makes this casserole divine. Hot from the oven, the meltingly lush topping is bubbly in the center and browned to a caramelized sugary-crisp at the edges. If time permits, you can make the whipped yams and the topping a day in advance. Cover and refrigerate them separately. Remove the yams and topping an hour before you plan to bake the casserole. Warm the topping and spread it over the yams just before baking. |

A boat neighbor, Gene Boone, Suggested that this was a way he liked sweet potatoes. We had them with steak and salad. It was like having desert with the main course.
I loved them, and I'm not a big sweet potato fan.
You can also place the filling into a casserole then spirinkle with the chopped nuts. Finish with a few extra pats of butter after you've taken it out of the oven. |

This is a delicious dish, even children like it if you don't tell them about the eggplant till they try it. Cubing the cheese instead of grating prevents it from melting too quickly and running out the side of the layer. |

Here's a unique recipe for perfectly roasted and peeled peppers or chilies. They are broiled or grilled on the barbecue to char them, then left in a paper bag to steam, which makes peeling them easier. Although you may think this is tedious the first time you try it, you'll find it actually takes little time, and the delicious results are well worth the effort. Keep the peppers covered with oil if you are preparing them in advance. They can he added to many recipes and are also excellent served alone, dressed with a light vinaigrette. If serving sweet peppers alone, place them in a serving dish and pour the dressing over them. Sprinkle with chopped fresh basil and decorate with small Niçoise olives. Serve at room temperature or slightly chilled. |

Asparagus is seldom better than when simply grilled. Pencil-thin varieties don't need to be peeled. Some people don't peel the thick stalks, although we think they cook more uniformly when peeled. |
