I make this primarily as a dip for Vietnamese summer rolls. The leftovers I use in Thai wraps with rice, chicken and veggies. Stores well in refrigerator for a month.

I add about 1/2 tsp garlic powder in mine and sometimes a drop or two of tabasco....it's really good!

YUMMY! The easiest Chile Con Queso is 1 can Rotel Tomatoes and Green Chiles and 2 lb. Velveeta melted together. Add a little chopped jalepeno if desired.
