This dessert combination of bittersweet chocolate and dusky dried chilies isn't so strange when you consider their happy pairing in Mexican mole sauce. This is a sort of reverse mole sauce-heavy on the sweet and chocolate, light on the spicy essence of chili peppers. If you have the same passions for chocolate and hot chilies that I do, you won't be disappointed by this exotic cake recipe.

*The cream of tartar will make the frosting fluffier/lighter and the vanilla isn't necessary if it isn't going to be eaten! When I have used this for "building" school projects I omit the cream of tartar and vanilla and it works fine. It dries very quickly. You can mix in food coloring if desired. It keeps well in a covered container in the refrigerator for a few weeks. Just moisten with a little water and stir to fluff up.

This frosting takes color well and keeps well in a sealed container in the refrigerator.

Store the frosting in a container with a tight fitting lid.The frosting is ideal for wedding cakes, since the absence of butter and milk keeps it from turning rancid or taking on a yellowish cast.

I used to make this for every birthday cake until I found Fluffy White Frosting which did not get hard on the outside. But this frosting does get crackly on the outside.

This is one simple, satisfying little cake, a standard from my mother's 1950s-era recipe box. Typed up on a big index card, the recipe has two notes I share with you: Next to the option of fresh or canned pumpkin, my mother wrote, "Fresh is best!" At the beginning of the instructions for mixing up the cake, she wrote emphatically, "Do not use mixer!" Now I find that canned pumpkin makes a beautiful cake, but I do take her advice on the issue of spoon versus mixer. It is worth the extra effort for the texture, and the recipe comes together quickly even when you're cooking unplugged. You can ice this cake while it is still warm from the oven, or wait until after it has cooled.

Can be made as individual cakes by using muffin cases and bake for 20 mins or untill baked and frost as above. children alos enjoy this cake as it is not over spiced and does not contain nuts.
