The hot syrup will cook the egg whites.

Ingredients

  • 1 cups sugar
  • 1/3 cup water
  • 1/3 teaspoon cream of tartar
  • 2 egg whites
  • 1 1/2 teaspoons vanilla
  • Dash salt

Directions

Combine sugar, water and cream of tartar in a saucepan. Cover saucepan for first 3 minutes to dissolve sugar crystals on sides of pan. Boil slowly without stirring, until syrup spins a 6 - 8-inch thread. (242 degrees) While syrup is cooking, beat eggs until stiff, but not dry. With mixer running, pour syrup in a thin stream into beaten egg whites. Add vanilla and salt; continue beating until frosting holds it's shape.
