Mint Recipes

This humble-looking dish delivers incredibly bright flavor for very little effort, Fancier versions involve topping the salad with sautéed ground pork or chunks of crabmeat. But I prefer this rendition- less work and more reason to appreciate the simple, rustic deliciousness of this dish.

Although this is great with fresh mint, try it with different herbs such as pineapple sage, a blossoming herb that's beautiful to grow at home.

As anyone who has ever cooked with them knows, eggplants soak up oil like a sponge. So to get some flavor into them quickly, we brush them with lemon juice, vinegar, and honey before sealing their surfaces with oil. We like to leave the skins on and stack them like pancakes in a wide-mouth pint jar.

This bright herbaceous glaze offers a springtime twist on the traditional mint and lamb pairing. Equally delicious paired with roasted lamb or the holiday ham.

Note~~ Use canned mangos if rupe ones are not in season. The results will be satisfactory, although not as tasty as when fresh mangos aew used.

Recipe can be halved. Amount depends on size and choice of mold used.
