Ingredients
- 1 1/4 c unsifted flour
- 3 T. sugar
- 1/2 t baking powder
- 1/2 t salt
- 1/2 t ground cinnamon
- 1/2 t ground cloves
- 1/8 t ground nutmeg
- 1 can (16 oz) pumpkin
- 2 eggs separated
- 1 qt. Mazola corn oil
- Confectioners' sugar
Directions
In a large bowl, stir together first 7 ingredients. Stir in pumpkin and egg yolks until well blended. In a small bowl, with a mixer at high speed, beat egg whites until peaks form; fold into pumpkin mixture. Pour corn oil into heavy 3 -quart saucepan, filling no more than one-third full. Heat over medium heat to 375o F. Carefully add pumpkin mixture by rounded teaspoonful,a few at a time. Fry, turning once , about 3 minutes or until golden. Drain on paper towel. Sprinkle whth sugar. Serve warm or cold.
Makes 5 dozen.
