Ingredients

  • 1 1/2 c. chocolate wafer crumbs
  • 1/4 c. + 2 tbsp melted butter
  • 1 1/2 tsp unflavored gelatin
  • 1/4 c. water
  • 3 egg yolks
  • 1/2 c. sugar
  • 1/4 c. light rum
  • 1 c. whipping cream, whipped

Directions

Combine crumbs and butter, mixing well. Place in 9" pieplate and press onto bottom and sides to form an even crush. Chill 1 hour. Combine gelatin and water in a small pan; let stand 1 minute. Cook over med. heat, stirring constantly, about 1 minute or until gelatin dissolves; set aside to cool. Beat egg yolks and sugar until thick and lemon colored. Gradually stir in gelatin mixture; beat well. Stir in rum; fold in whipped cream. Pour into chilled pastry. Chill pie until firm. May be topped with grated chocolate and chocolate curls, if desired. 1 9" pie.
