Ingredients
- 1/2 cup butter or margarine, softened
- 1 cup sugar
- 3 eggs
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 1/4 cup milk
- 1/4 cup molasses
- 1/4 teaspoon baking soda
- 1/4 cup bourbon whiskey
- 2 cups raisins
- 2 cups chopped pecans
Directions
Cream butter; gradually add sugar, beating well. Add eggs, one at a time, beating well after each addition.
Combine next 4 ingredients; add to creamed mixture alternately with milk, beginning and ending with dry ingredients. CSombine molasses and baking soda; add to creamed mixture. Stir in remaining ingredients.
Pour batter into a greased and floured 9-x5-x3-inch loafpan. Bake at 300 degrees for 1 hour and 40 minutes or until a wooden pick inserted in center comes out clean. Refrigerate cake for easier slicing.
Yield: one 9-inch loaf
