• 1 (12 oz.) can evaporated skim milk, divided
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup sugar
  • 1/8 teaspoon ground cinnamon
  • 14 large marshmallows


Pour 1 cup of milk into a 4-cup glass measure. Refrigerate until chilled. Refrigerate beaters of an electric mixer until cold. In a medium microwave-safe bowl, combine cocoa, sugar and cinnamon. Stir in remaining milk. Add marshmallows. Microwave on 50% power(medium) 2-3 minutes, or until marshmallows are melted, stirring every minute during cooking. Cool. Beat chilled milk with chilled beaters until stiff. Fold into cooled mixture. Pour into a 2-quart casserole dish. Cover tightly. Freeze until firm.

Serves 10. (97 calories per serving)
