For a change of pace, top with a broiled tomato slice before adding Hollandaise sauce.
Ingredients
- Ham or Canadian bacon
- English muffins
- Eggs
- Hollandaise sauce
Directions
Saute six slices ham briefly in butter. Place each on a toasted English muffin half and top each with a poached egg. Cover with Hollandaise sauce. Canadain bacon may be substituted for the ham. If desired, garnish with a truffle slice or a sprig of parsley
