Ingredients

  • 1/4 onion, chopped
  • 1 tsp. oil
  • 1 clove garlic
  • 1/2 tsp minced ginger
  • 1/4 green pepper
  • 1 tbs. peanut butter
  • 1 tbs. sohyu
  • 1/2 cup water (or more)
  • 2 tbs. celery leaves, chopped
  • 1/4 pound firm tofu, cubed
  • 2 tbs. toasted cashew pieces

Directions

Saute onion in oil with whole garlic. When onion is tender, crush the garlic with a fork. Add the ginger and pepper and cook gently a minute more.
Stir in the peanut butter and shoyu, then water and celery leaves. Stir until smooth; then simmer about 5 minutes.

Add the tofu and cashews and heat through. Serve over steamed vegetables


Makes 3/4 to 1 cup.
