This keeps well and tastes even better the second day. Can be baked in loaf pans, too.

Ingredients

  • 3/4 cup shortening, butter and oleo, mixed
  • 1 3/4 cup sugar
  • 4 whole eggs
  • 1 tsp. cinnamon
  • 2 1/2 cups flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • 1/2 lb. poppy seed(or one 12 oz. can Solo)
  • 1/2 cup milk
  • 1 cup mashed potatoes
  • 1/2 cup chopped nuts

Directions

Sift flour, baking powder, cinnamon and salt together. Cream shortening with sugar; add eggs, one at a time, and beat well after each addition. Add milk alternately with flour mixture; beat well, then add vanilla, potatoes, poppy seed and nuts. Beat well after each addition. Grease and flour a babovka form, angel food or Bundt pan. Bake at 350 degrees for 1 hour and 10 minutes or until toothpick inserted comes out clean.
