Ingredients
- 2 Tbsp powdered bay leaf
- 2 Tbsp celery salt
- 1 Tbsp dry mustard
- 2 tsp fine ground black pepper
- 1 tsp white pepper
- 1 tsp ground nutmeg
- 1 tsp ground ginger
- 1 tsp paprika
- 1 tsp cayenne
- 3/4 tsp ground cloves
- 1/2 tsp ground cardamom
Directions
Combine the bay leaf, celery salt, dry mustard, black pepper, white pepper, nutmeg, ginger, paprika, cayenne, cloves, and cardamom. Blend well. Store in an airtight container in a cool dry place.
This seasoning can be used on almost any fish or seafood you want to smoke or grill. It is also good on chicken.
Yield about 1/2 cup
