I don't suppose this is the "authentic" wedding soup recipe - but it's delicious! Serve w/crusty Italian bread, of course.
Ingredients
- 1/2 lb. sweet Italian sausage
- 1/2 c. Italian bread crumbs
- 1 egg
- 1/4 t. oregano
- 1/4 t. dried parsley
- 1/4 t. garlic powder
- Dash of salt and pepper
- 1 T. olive oil
- 1/3 c. water
- 2 c. cooked pastina
- 2 qt. canned chicken broth
- 1 chicken bouillon cube
- 1/2 c. frozen spinach, thawed, squeezed
- or 1 c. fresh spinach chopped roughly
Directions
Meatballs- Mix first seven ingredients in bowl. Form bitesized meatballs. Saute in olive oil over medium heat until lightly browned. Add water, reduce heat, cover and simmer for 3 minutes.
Soup- Place chicken broth, bouillon, cooked pastina, spinach and drained meatballs in large pot. Bring to boil. Reduce heat and simmer 10 minutes.
