Italian Wedding Soup Recipe | |
Italian Soup | |
Ingredients:
1/2 lb. sweet Italian sausage1/2 c. Italian bread crumbs 1 egg 1/4 t. oregano 1/4 t. dried parsley 1/4 t. garlic powder Dash of salt and pepper 1 T. olive oil 1/3 c. water 2 c. cooked pastina 2 qt. canned chicken broth 1 chicken bouillon cube 1/2 c. frozen spinach, thawed, squeezed or 1 c. fresh spinach chopped roughly
Directions:
Meatballs- Mix first seven ingredients in bowl. Form bitesized meatballs. Saute in olive oil over medium heat until lightly browned. Add water, reduce heat, cover and simmer for 3 minutes.Soup- Place chicken broth, bouillon, cooked pastina, spinach and drained meatballs in large pot. Bring to boil. Reduce heat and simmer 10 minutes. I don't suppose this is the "authentic" wedding soup recipe - but it's delicious! Serve w/crusty Italian bread, of course.
