Ingredients

  • 1 1/2 C frozen diced potatoes, peppers and onion, thawed
  • vegetable oil spray
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 T ripe black olive slices
  • 1 C thin zucchini slices
  • 1 1/2 C (16 oz.) Healthy Choice garlic flavored shredded cheese
  • 1 C chopped tomato
  • 2 C of egg beaters

Directions

Microwave potatoes 3 - 5 min. on high, drain. Spray a 10" ovenproof dish . Layer the potatoes, salt, pepper, zucchini, 1 C cheese and tomato. Shake egg beaters and pour over the vegetables in the dish. Bake 25 minutes at 350 degrees. Top with remaining cheese; cover with foil and continue baking 5 more minutes or until center sets.


Cool before serving 6 servings 108 calories, 0 mg cholestrol 477 mg sodium, 0.5g fat
