Ingredients

  • 4 flour tortillas
  • 1/4 cup salsa (approx.)
  • 1/2 cup grated cheese (approx.)
  • additional ingredients:
  • guacamole, refried beans, chopped green onion, chopped peppers, chopped tomato, etc.

Directions

Place 2 tortialls side-by-side on a cookie sheet (you can do more than 2 at a time if you use a full-size oven instead of a toaster oven). Spread each one with salsa and any additional ingredients you're using (for a non-vegetarian version you could use cooked chicken, ground beef, or ham). Sprink with cheese. Place under broiler for about 2-3 minutes, until the cheese is bubbling. Top with remaining 2 tortiallas and broil an additional 30 seconds or so (to crisp up the tortilla). Cut into wedges and serve with additional salsa and/or guacamole and/or sour cream.
