Recipe can be doubled, if desired using two 1-pound cans.

Ingredients

  • 1/4 cup oil
  • 1/2 cup sugar
  • 1 egg, beaten
  • 1/2 cup mashed ripe banana(2 small, mashed with fork)
  • 1 cup flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 tsp. vanilla extract
  • 1/2 cup chopped walnuts or other nuts

Directions

Beat oil and sugar together wth spoon. Stir in egg and banana. Add remaining ingredients except nuts and mix well. Stir in nuts and put batter in well-greased 1-pound coffee can. Cover with foil and tie. Set on rack in cooker and pour 2 cups hot water around can. Cover cooker and cook on high about 2 1/2 hours. Let stand on cake rack about 10 minutes, then turn out on rack and cool completely. Store overnight before cutting. Good with cream cheese for tea sandwiches or as a gift.
