Ingredients

  • 8 eggs
  • 4 C small curd cottage cheese
  • 1 tsp.salt
  • 1/2 tsp. black pepper
  • 1 tsp nutmeg
  • Dash of paprika
  • Pinch of red pepper
  • 2/3 C of chopped parsley
  • 2 T of dijon mustard
  • 2 T of butter cut into pieces

Directions

Beat the eggs in a large mixing bowl until light; stir in remaining ingredients. Pour into a lightly buttered 2 qt. casserole, and bake at 325 degrees for 50-60 minutes until center is done.


Serve hot or warm.
