Ingredients
- 8 eggs
- 4 C small curd cottage cheese
- 1 tsp.salt
- 1/2 tsp. black pepper
- 1 tsp nutmeg
- Dash of paprika
- Pinch of red pepper
- 2/3 C of chopped parsley
- 2 T of dijon mustard
- 2 T of butter cut into pieces
Directions
Beat the eggs in a large mixing bowl until light; stir in remaining ingredients. Pour into a lightly buttered 2 qt. casserole, and bake at 325 degrees for 50-60 minutes until center is done.
Serve hot or warm.
