Brunch Eggs Recipe

Ingredients:
8 eggs
4 C small curd cottage cheese
1 tsp.salt
1/2 tsp. black pepper
1 tsp nutmeg
Dash of paprika
Pinch of red pepper
2/3 C of chopped parsley
2 T of dijon mustard
2 T of butter cut into pieces

Directions:
Beat the eggs in a large mixing bowl until light; stir in remaining ingredients. Pour into a lightly buttered 2 qt. casserole, and bake at 325 degrees for 50-60 minutes until center is done.
Serve hot or warm.
8 - 10 servings
