Ingredients

  • 2 tablespoons, 1 cup sugar
  • 2 cups biscuit mix (Bisquick)
  • 2/3 cup water, 2 cups water
  • 1 cup huckleberries

Directions

Add 2 tablespoons sugar to 2 cups biscuit mix and 2/3 cups water. Mix together. If sticky, add enough biscuit mix so that it can be rolled. Roll the dough to a thin 9-inch wide rectangle. Spread 1 cup huckleberries over the surface. Beginning at one 9 inch edge, roll the dough as for jelly rolls, being careful to keep berries spread evenly.

Meanwhile, bring to boil 1 cup sugar and 2 cups water in 9" x 5" metal bread pan. Place the rolled dough in the boiling syrup and bake in a 350 degree ove for 40 minutes or so until tests done in the middle with a straw.

Cool in the pad until just warm. Slice and serve in a bowl with cream.
