Ingredients

  • To each part:
  • Firm diced lard
  • Use:
  • 2 parts leans ground pork
  • Season the lard mixture with:
  • Thyme
  • Summer Savory
  • Coriander
  • Sweet Marjoram
  • Pulverized bay leaf
  • Freshly ground pepper

Directions

For 4 servings allow about 1 lb. of freshly ground sausage meat.

This has to be played by ear. The best way to learn is to mix up a small batch and cook up a sample.
