Ingredients

  • 5 pounds boneless chicken thighs
  • 4 tablespoons rice flour
  • 4 tablespoons sugar
  • 1/2 teaspoon salt
  • 5 tablespoons soy sauce
  • 2 tablespoons chopped green onions
  • 2 eggs, slightly beaten
  • 1 - 2 cloves garlic, minced
  • 1 teaspoon finely chopped fresh ginger
  • vegetable oil
  • Garnish: Pineapple chunks and sesame seeds

Directions

Skin chicken and cut into bite-size pieces. Combine rice flour, sugar, salt, soy sauce, onions, eggs, garlic and ginger. Marinate chicken in mixture for 2 hours, or preferably overnight. Turn every few hours. Fry pieces in hot oil until brown and crisp. Drain. Garnish with pineapple chunks and sprinkle with sesame seeds. Serve hot or cold.
