Ingredients

  • 2 to 3 cups yellow (or zucchini) squash, cooked until barely tender
  • 1 cup diced celery
  • 1 cup diced onion
  • 1/2 pound pork sausage
  • 2 beaten eggs
  • 1 cup cracker crumbs
  • 1/2 cup cubed Cheddar cheese
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • Parmesan cheese

Directions

Preheat oven to 350 degrees. Lightly fry sausage; drain off grease. Add celery and onion; saute until tender. Add squash. Mix eggs, crumbs, cheese cubes, salt, pepper and thyme. Mix into sausage mixture. Spoon into a 2-quart casserole that has been sprayed with PAM. Bake at 350 degrees for 35 minutes. Sprinkle top of casserole with Parmesan cheese. Continue baking for 10 minutes.
