Ingredients

  • 2 cups mashed sweet potatoes
  • 2 cups all-purpose flour
  • 1 tablespoon unsalted butter
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 to 1/2 cup buttermilk

Directions

Preheat the oven to 400 degrees F. Grease 2 baking sheets.

Mix together thoroughly the sweet potatoes, flour, butter, sugar, salt, and baking soda. Mix in enough buttermilk to form a soft dough(it will be sticky). Coat hands with flour and lightly toss dough back and forth a few times to cover with flour. Do not overwork the dough. Roll out on a well-floured board to a thickness of 1/2 inch. Cut with a floured 1/2-inch biscuit cutter and bake for about 15 minutes, or until tops begin to slightly brown.


Makes approximately 24.
