Ingredients
- Pastry for two-crust-9"-pie
- 36 Ritz crackers, coarsely broken(about 1 3/4c crumbs)
- 2 cups water
- 2 cups sugar
- 2 tsp cr of tratar
- 2 Tbsp lemon juice
- grated rind of one lemon, untreated
- 2 Tbsp Blue Bonnet
- 1/2 tsp gr cinnamon
- (NO APPLES NEEDED)
Directions
Roll out half of pastry & line pie plate Place crackers in crust. In saucepan, over high heat, heat water,sugar & cr of tartar to a boil, simmer for 15 min. Add Ljuice & rind,cool. Pour syrup over crackers. Dot with margarine, sprinkle
with cinnamon. Roll out remaining pastry, place over pie. Trim, seal & flute edges. Slit top crust to allow steam to escape.Bake @ 425 for 30-35 min or til crust in crisp & golden.
