Ingredients:
Pastry for two-crust-9"-pie36 Ritz crackers, coarsely broken(about 1 3/4c crumbs) 2 cups water 2 cups sugar 2 tsp cr of tratar 2 Tbsp lemon juice grated rind of one lemon, untreated 2 Tbsp Blue Bonnet 1/2 tsp gr cinnamon (NO APPLES NEEDED)
Directions:
Roll out half of pastry & line pie plate Place crackers in crust. In saucepan, over high heat, heat water,sugar & cr of tartar to a boil, simmer for 15 min. Add Ljuice & rind,cool. Pour syrup over crackers. Dot with margarine, sprinklewith cinnamon. Roll out remaining pastry, place over pie. Trim, seal & flute edges. Slit top crust to allow steam to escape.Bake @ 425 for 30-35 min or til crust in crisp & golden. |
