• 2 tbsp butter
  • 2 tbsp flour
  • 1 1/2 c. half-and-half
  • 4 oz. blue cheese, crumbled


Melt butter in heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add half-and-half; cook over med. heat, stirring constantly, until thickened and bubbly. Add blue cheese, and continue cooking over low heat, stirring constantly until cheese melts.

Makes 1 1/2 cups.
