Ingredients

  • 6 large tomatoes, ripe -- peeled and seeded
  • 1/2 teaspoon salt
  • 1 lemon -- juiced
  • 1 large clove garlic -- minced
  • 1/2 cup basil -- chopped
  • 1/2 cup olive oil
  • Parmesan cheese -- grated
  • salt and pepper to taste

Directions

Lightly sprinkle cut surfaces of tomatoes with salt and let stand 10 mins. Get rid of additional juice and coarsely chop. Put all ingredients into bowl, adjust seasonings. Serve over hot, thin pasta with Parmesan.
