Ingredients

  • 1 c. fresh blueberries
  • 1/4 c. sugar
  • 1/2 tsp salt
  • 1 egg
  • 2 c. plus 2 tbsp flour, divided
  • 1 tbsp plus 1 tsp baking powder
  • 1 c. milk
  • 2 tbsp vegetable oil

Directions

Dredge blueberries in 1 tbsp flour; set aside. Combine remaining 2 c. flour, sugar, baking powder and salt. Beat together milk, egg and oil; add to dry ingredients and stir just until moistened. Fold in blueberries. Fill greased muffin pans 2/3 full.

Bake at 400 for 20 to 25 minutes. Remove from pan immediately.


Makes 1 dozen.
