Ingredients

  • 4 eggs
  • 2 cups sugar
  • 1 cup cooking oil
  • 1 cup buttermilk
  • 2 cups self rising flour
  • 1 1/2 teaspoons coconut flavoring
  • 1 small can coconut (or 1 to 1 1/4 cups)
  • Icing:
  • 1 cup sugar
  • 1/2 cup water
  • 1 teaspoon coconut flavoring

Directions

Beat well the eggs and sugar. Add cooking oil and buttermilk. Add 2 cups self rising flour,1 1/2 teaspoons coconut flavoring and 1 small can coconut. Cook in Bundt pan for 45minutes at 350 degrees.

Icing:
Cook 1 cup sugar, 1/2 cup water, and 1 teaspoon coconut flavoring. Boil hard for 1 1/2 minutes.

Spoon over hot cake while it is still in thepan. Wait for 7 minutes, then remove cake from pan.
