Ingredients:
4 eggs2 cups sugar 1 cup cooking oil 1 cup buttermilk 2 cups self rising flour 1 1/2 teaspoons coconut flavoring 1 small can coconut (or 1 to 1 1/4 cups) Icing: 1 cup sugar 1/2 cup water 1 teaspoon coconut flavoring
Directions:
Beat well the eggs and sugar. Add cooking oil and buttermilk. Add 2 cups self rising flour,1 1/2 teaspoons coconut flavoring and 1 small can coconut. Cook in Bundt pan for 45minutes at 350 degrees.Icing: Cook 1 cup sugar, 1/2 cup water, and 1 teaspoon coconut flavoring. Boil hard for 1 1/2 minutes. Spoon over hot cake while it is still in thepan. Wait for 7 minutes, then remove cake from pan. |
