Ingredients

  • redfish fillets
  • lemon juice
  • butter
  • salt&white pepper
  • sweet paprika
  • worchestershire sauce

Directions

In my opinion Redfish is one of the finest eating fish in the world. The rest of the world recently discovered this, and only recently has Redfish become commonly available: and then only in the deep South. Ten years ago it was so over fished that local authorities had to intervene. It seems to have made a good comeback.

Whatever you do don't blacken it. Just throw a little lemon juice on it one hour before cooking. Garnish with a little Paprika for color, and broil in butter until it flakes. Add S&P, and serve.

Add Worcestershire while broiling if you need to serve with a heavier wine, or if you just like it that way.
