(Notes: When I make this I usually use almost twice this amount of garlic! Use strong/sharp cheddar for best flavour.)

Ingredients

  • 1 T butter or oil
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic
  • 2 T flour
  • 2 cups stock
  • 3 to 4 cups milk
  • 1 1/2 cups grated cheddar
  • 1 t paprika
  • 1-2 T chopped chives

Directions

Melt the butter or oil in a medium-large pot, add the onion and garlic, and saute slowly until soft. Add the flour and cook another 3 minutes, stirring constantly. Slowly add the stock and milk and bring to a boil, stirring frequently. Stir in the cheese and whisk until melted. Serve garnished with paprika and chives.
