Ingredients:
1 T butter or oil1/2 cup onion, finely chopped 2 cloves garlic 2 T flour 2 cups stock 3 to 4 cups milk 1 1/2 cups grated cheddar 1 t paprika 1-2 T chopped chives
Directions:
Melt the butter or oil in a medium-large pot, add the onion and garlic, and saute slowly until soft. Add the flour and cook another 3 minutes, stirring constantly. Slowly add the stock and milk and bring to a boil, stirring frequently. Stir in the cheese and whisk until melted. Serve garnished with paprika and chives.(Notes: When I make this I usually use almost twice this amount of garlic! Use strong/sharp cheddar for best flavour.)
