Ingredients

  • 2 tbsp butter/margarine
  • 2 tbsp flour
  • 1/2 tsp salt
  • 1 1/2 cups milk/soy milk
  • 1/2 cup chopped onion
  • 1-2 cloves garlic, minced
  • 1/2 cup chopped mushrooms
  • 1 carrot, grated
  • 1 cup finely chopped nuts (walnuts work best)
  • 1 cup cooked rice
  • 1-1/2 cups toasted bread crumbs
  • 2 eggs (or equivalent egg replacer)
  • 1/4 cup chopped fresh parsley
  • 2-3 drops hot sauce
  • salt and pepper
  • cracker crumbs

Directions

Blend butter, flour, and salt over low heat. Stir in milk and cook until thickened; simmer about 2 minutes, stirring constantly. Remove from heat and cool slightly. Saute garlic, carrots, onions, and mushrooms in the oil briefly until somewhat softened. Combine with white sauce and remaining ingredients except crumbs; mix well; chill. Form into patties, roll in flour or cracker crumbs (optional but helps hold it together), and fry, grill, or bake until brown.
