Veggie-Nut Burger Recipe | |

Ingredients:
2 tbsp butter/margarine2 tbsp flour 1/2 tsp salt 1 1/2 cups milk/soy milk 1/2 cup chopped onion 1-2 cloves garlic, minced 1/2 cup chopped mushrooms 1 carrot, grated 1 cup finely chopped nuts (walnuts work best) 1 cup cooked rice 1-1/2 cups toasted bread crumbs 2 eggs (or equivalent egg replacer) 1/4 cup chopped fresh parsley 2-3 drops hot sauce salt and pepper cracker crumbs
Directions:
Blend butter, flour, and salt over low heat. Stir in milk and cook until thickened; simmer about 2 minutes, stirring constantly. Remove from heat and cool slightly. Saute garlic, carrots, onions, and mushrooms in the oil briefly until somewhat softened. Combine with white sauce and remaining ingredients except crumbs; mix well; chill. Form into patties, roll in flour or cracker crumbs (optional but helps hold it together), and fry, grill, or bake until brown. |
