Ingredients
- 1/2 c. diced carrot
- 1/2 c. snipped fresh parsley
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 3 1/2 c. (1 lb. 11 oz can) sauerkraut, drained
- 2 cans beef consomme
- 2 soup cans water
- 4 c. tomato juice
- 1/4 tsp pepper
- 1/2 tsp salt
- 3 tbsp uncooked rice
Directions
Combine all ingredients in large kettle. Mix well. Simmer, covered, for 1 hour. Serve with sour cream if desired.
Makes about 2 quarts, or 6 servings.
