Rumanian Sauerkraut Soup Recipe | |

Ingredients:
1/2 c. diced carrot1/2 c. snipped fresh parsley 1/2 c. chopped onion 1/2 c. chopped green pepper 3 1/2 c. (1 lb. 11 oz can) sauerkraut, drained 2 cans beef consomme 2 soup cans water 4 c. tomato juice 1/4 tsp pepper 1/2 tsp salt 3 tbsp uncooked rice
Directions:
Combine all ingredients in large kettle. Mix well. Simmer, covered, for 1 hour. Serve with sour cream if desired.Makes about 2 quarts, or 6 servings.
