Ingredients

  • 1 cucumber
  • 1 head cauliflower
  • 1 bunch broccoli
  • 3 stalks celery with leaves
  • 2 cups cherry tomatoes
  • 1 cup sliced mushrooms
  • 1/2 cup ripe olives
  • 1 teaspoon sugar
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper
  • 1/4 teaspoon basil
  • 1 (16 oz.) bottle Italian dressing

Directions

Do not pare cucumber. Cut into thin wafers. Break cauliflower into flowerettes. Cut broccoli into small pieces. Cut celery into 2 inch lengths. Combine vegetables and olives in a large salad bowl. In a separate bowl, combine remaining ingredients to make marinade. Blend thoroughly. Pour over vegetables. Toss to mix. Refrigerate overnight.


Serves 6.
