Ingredients

  • 1/4 c. vinegar
  • 1/4 c. vegetable oil
  • 1/2 c. mayonnaise
  • 1/4 c. chopped chives
  • 1 1/2 tsp prepared mustard
  • 1/4 tsp salt
  • 1/4 tsp garlic powder
  • 2/ c. broccoli flowerets
  • 2 c. cauliflower flowerets
  • 2 c. sliced carrots
  • 1 red onion, sliced

Directions

Pour vinegar into medium mixing bowl; slowly whisk in oil until combined. Whisk in mayonnaise, chives, mustard and seasonings; mix well. Combine vegetables; pour dressing, tossing well. Marinate in refrigerator several hours or overnight.

Yield: 12-15 servings as appetizers or side dishes.
